Säsi is a small brewery dedicated to brewing kombucha according to ancient traditions. Kombucha is a fermented tea drink that has been brewed across the globe for centuries. Even the Vikings drank this magical beverage before embarking on a voyage. During the fermentation process, the symbiotic culture of bacteria and yeast (SCOBY) produces a wealth
of vitamins, acids, enzymes and live bacteria. In addition, as a result of the fermentation process, the drink will develop a natural fizz and sediment. Research shows that regular consumption of kombucha can have health benefits. According to recent research conducted in Latvia, kombucha provides a boost of energy, improves the immune system, encourages detoxification in the body, and supports joint health.
To enhance our knowledge and skills, we have cooperated with brewmasters and specialists in the field across the world. Ever since the foundation of Säsi Brewery, we have received guidance from a top Canadian researcher in the field of microbiology and chemistry, who is
also the founder of the largest kombucha brewery in Canada. It is thanks to their advice and guidance that we have gained such a deep understanding of kombucha, allowing us to produce high-quality, world-class kombucha for our customers.
The kombucha brewed in Säsi Brewery is handcrafted and unpasteurised to preserve the authenticity and true character of the beverage. The raw materials used in production are organically certified and carefully picked. We have selected high-quality aromatic varieties of black and green tea for the production of our kombucha. The sugar used in the beverages is organic unrefined raw cane sugar, and the juices used to flavor the beverages are exclusively from organic producers.
